Synthesis of CLA ‐rich lysophosphatidylcholine by immobilized MAS1‐H108A‐catalyzed esterification: Effects of the parameters and monitoring of the reaction process
Abstract Conjugated linoleic acid (CLA)‐rich lysophosphatidylcholine (LPC) with many proven beneficial effects was successfully synthesized by an immobilized mutant lipase (MAS1‐H108A)‐catalyzed esterification of glycerophosphorylcholine (GPC) and CLA‐rich FAs. Under the optimized conditions (temperature of 55 °C, substrate molar ratio of CLA‐rich FAs to GPC of 40:1, and enzyme loading of 300 U/g), LPC content as high as 89.10 mol% was achieved, which was exceptionally higher than any ever‐reported value. By monitoring the esterification process, it was found that sn1‐LPC was easy to synthesize and was the p...

Physical properties, microstructure, intermolecular forces and oxidation stability of soybean oil oleogels structured by different cellulose ethers
Abstract Edible oleogels were prepared by different kinds of hydroxypropyl methyl cellulose (HPMC) and methylcellulose (MC) through emulsion‐templated method. Physical properties of the oleogels such as rheological behavior and oil binding capacity were evaluated. Polarizing light microscope (PLM) as well as scanning electron microscope (SEM) was used to gain information on the microstructure of the samples. Fourier transform infrared spectroscopy (FTIR), and X‐ray diffraction (XRD) were used to evaluate intermolecular forces between the polysaccharides in the oleogels. It was found that oil‐water interface layers of...

Edible oil production from microalgae: A review
Abstract Microalgae are considered an interesting candidate for the sustainable production of edible oils. Because microalgae contain abundant polyunsaturated fatty acids (PUFA) and have high photosynthetic rates and high oil productivity, they are superior to terrestrial oleaginous crops for producing edible oils. Microalgae are cultivated in aquatic environments, and thus, oil extraction methods for microalgae must consider the influence of water. This paper provides an overview of the suitability of microalgal lipid compositions and proposes a selection of species for edible oil production. The numerous technologies cur...

Inclusion of flaxseed, broken rice and distillers dried grains with solubles (DDGS) in broiler chicken ration alters the fatty acid profile, oxidative stability and other functional properties of meat
The objective of the study was to evaluate the fatty acid profile, oxidative stability and other associated quality attributes of broiler chicken meat as affected by feeding ration containing flaxseed, broken rice and distillers dried grains with solubles (DDGS). Six dietary treatments were formulated with no flaxseed in first one and 10% in other five; and 20% broken rice, 40% broken rice, 5% DDGS and 10% DDGS in third, fourth, fifth and sixth treatment, respectively. No dietary effects were observed on body weight gain, but 10% flaxseed along with either broken rice or DDGS increased feed intake of birds. The flaxseed si...

Ultrasound waves increase the yield and carotenoid content of lipid extracted from cephalothorax of Pacific white shrimp (Litopenaus vannamei)
Abstract Lipids from cephalothorax of Pacific white shrimp (Litopenaus vannamei) were obtained using solvent extraction and ultrasonic assisted extraction (UAE). Among all solvents used, the mixture of hexane:isopropane (1:1) provided the highest yield (25.32% dry weight basis) and carotenoid content (1.97 mg/g lipid). When ultrasonication with different amplitudes (50‐90%) was used for 25 min, the highest yield was obtained at 80% amplitude (p < 0.05). With the same ultrasonication time, UAE with continous mode rendered the higher yield than pulse mode (p < 0.05). Lipid extracted with hexane:isopropanol mixture wi...
