5-Minute Meal: To-Go Omelet (in a Mug!)

In my brand-new book, Schedule Me Skinny: Plan to Lose Weight and Keep it Off in Just 30 Minutes a Week (It hits shelves this week!), I show readers that it is possible to eat healthy meals even when you are crazy busy. Seriously! And since we all know breakfast is the most important meal of the day, it's critical to have options that you can literally throw together and take with you on rushed mornings. This on-the-go omelet is one of my new favorite recipes from my book because it is high in filling protein, packed with veggies and is full of flavor! (Can't you see that smile on my face?!) Simply whisk all the ingredients together, microwave, grab a fork and a piece of whole grain toast to round out the meal, and you are good to go!
