Skinny Fat Tuesday Recipe: Three-Melon Gazpacho Soup

Mardi Gras has already been in full-swing for a bit (cue the world shortage of tacky bead necklaces), but the big day, Fat Tuesday, is finally here, and like any good NOLA fan, we're looking to celebrate with a seriously legit local dish. Cajun and creole food characterizes the area -- think lots of seafood, Cajun spices like cayenne pepper and classic dishes like gumbo. Obviously, we wanted in on the action, so we reached out to Juan Carlos Gonzalez, executive chef at NOLA's SoBou restaurant, for a dish that was heavy on New Orleans's tradition, light on the cals. And the Three-Melon Gazpacho he hooked us up with? Well we tested it over the weekend, and let's just say it was lick-the-bowl-clean good.
